This is a convenience method that creates an instance of the CustomRoutingEndpointConfiguration.Builder avoiding the need to create one manually via CustomRoutingEndpointConfiguration.builder().

When the Consumer completes, SdkBuilder.build() is called immediately and its result is passed to endpointConfigurations(List<CustomRoutingEndpointConfiguration>).
